Garlic and cheese potatoes

What a great summer we have had! I bought my husband a small grill for his birthday and it has gotten plenty of use. One of our favorite dishes that goes great with everything is this fantastic potato recipe. You can make it in the oven as well.

3 medium baking potatoes, cleaned and sliced (thinly-very thinly)

1 onion sliced

1-2 tablespoons butter

2-3 minced cloves of garlic

1/2 teaspoon parsley

salt and pepper to taste

1/2 cup shredded Cheddar cheese


Add all ingredients EXCEPT the cheese to a large microwavable bowl. Warm up in microwave 2 minutes or until butter is melted.

Mix well

Scoop mixture onto foil and make sure you have folded it well

Place on grill for 20-25 minutes

Take off grill and add cheese, close pocket again to allow cheese to melt.

When cooking in over, cook at 350 degrees

Sloppy Mias

I love making Sloppy Joes, but I'm not a huge fan of the canned sauce to make them. I always end up adding to it to make it taste better. Now I just use my own recipe! It's realllllly good.

1 package Morning Star Farm OR Boca crumbled soy (or use real meat)

1/4 cup chopped onion

1/4 teaspoon of garlic salt or 1/2 teaspoon of garlic powder

1 teaspoon of yellow mustard

3/4 cup ketchup

3 teaspoons of brown sugar

salt and pepper to taste (I found that using the garlic salt, there was no need for additional salt)

Onion powder to taste



Directions:

Brown the "meat"

If using real meat, drain the fat

Add other ingredients and cook on low heat for about 20-30 minutes


Super easy and oh so good!
